Episode #57 -We're Making Potato Pizza w/ Italian Mother Melissa Ciancio in Castropignano, Italy

In Episode #57 – we are in Castropignano, Italy at the house of my very good friend Melissa Ciancio. Melissa is a mother of 2 growing Italian boys and she never lets any food go to waste including left over Mash Potatoes. This Thanksgiving do NOT throw away or give away your leftover mashed potatoes. Instead make a Potato Pizza. If you love potatoes you are going to LOVE this. The best part is it’s very easy to make. Watch to get the step by step instructions on how you can make this Potato Pizza for your family and friends. One important ingredient that Nonna and Melissa always adds to their recipes is cooking with their hearts. So, be sure when you make this you do it with all your heart. We also have another special guest appearance Chef Antonio Trotta from Campobasso, Italy. I had the honor of him cooking a special 5 course dinner for my 50th Birthday celebration this year in Castropignano, Italy and it was incredible. Enjoy!



INGREDIENTS:

– Left Over Mash Potatoes

– 2 Eggs

– Mozzarella Cheese

– Parmesan Cheese

– Speck (or you can use Prosciutto)

– Mortadella

– Olive Oil

– Salt

– Pepper

– Bread Crumbs

– Butter

– Parsley

– Milk


Pre-heat and Cook for 30 Minutes or until the top is golden brown at 180° Celsius or 356° Fahrenheit. Let cool and place in Refrigerator for over 8 hours.

***Best served cold.
